Ingredients for making Pavé de Bis with ganache:

 1 can of sour cream

 1 can of condensed milk

 1 cup of milk (240 milliliters)

 1 yolk

 90 grams of bar milk chocolate

 1 biscuit box

 1 tablespoon of cornstarch

How to make Pave de Bis with ganache:

Separate the whey from the cream. To do this, take the can to the freezer or freezer for 30 minutes, make 2 holes and turn to drain the whey. Reserve the serum and cream.

To prepare the white pave cream, mix the cornstarch in the milk and set aside.

In a pan, place the condensed milk, the whey from the cream, half the cream without whey, the starch dissolved in the milk and the yolk. Place over medium heat and stir with a wire whisk until thickened.

Turn off the heat, transfer the cream to a bowl and cover with transparent film (PVC) so that it touches directly with the cream. This prevents the formation of a hardened layer on the cream. Refrigerate.

To prepare the chocolate ganache: in a bowl place half of the whey-free cream and the chocolate bar. Microwave for 1 minute, stirring every 30 seconds. Reserve.

To assemble the pavé: separate a platter and make a layer of coarsely chopped Bis. Set aside some chocolates to decorate.

Tip: I used white Bis to contrast the flavor of the ganache.

Top with cream, ganache and remaining chopped Bis. Refrigerate for at least 1 hour.
